Brisbane’s award-winning boutique distiller, Milton Rum Distillery, has relocated from Milton to Albion, set inside Craft'd Grounds, an old timber mill transformed into an artisan-focused dining and drinking precinct.
Located beside Collingwood Black’s cocktail bar, which is accessed via the laneway, the 20sqm distillery boasts a striking vertical copper still - one of the most energy and resource-efficient stills in Australia - designed by chemical engineer Alexander Bell, who co-founded Milton Rum with Asa Boardman.
The customised still can produce 70,000 to 150,000 bottles per year at a fraction of the cost of other distilleries, and repurpose food waste like fruit skins to create other premium spirits.
Ironically, the distillery is named after the original Milton Rum Distillery, then one of Queensland’s largest rum producers, destroyed during a flood in 1893 and never reopened. Likewise, the new Milton Rum Distillery was devastated by flooding earlier this year, prompting it to find a new home.
The boutique rum distillery offers tastings in an old-world inspired space, featuring vaulted ceilings and plenty of timber, furnished with tables, chairs and a leather couch.
Groups of up to 12 can sample the range of award-winning rums before popping over to Collingwood Black’s bar to sip specially-curated cocktails made using the distillery’s spirits including the Milton Mojito.
Milton Rum's range of craft spirits includes its signature Spice Cane Spirit, Spanish Inspired Dark Rum, Brazilian Inspired Aguardente, and a Coffee And Cane Spirit, made in collaboration with neighbouring Seven Miles Coffee Roaster.
Good to know - The distillery door will also include a botanical glasshouse, to be fully set up by the end of 2022, where the team will grow botanicals like lemon myrtle and fresh citrus, to draw many of its infusions from.
