Doughcraft is a little slice of Europe in Albion - an artisan bakery and deli - housed inside the beautifully restored old timber mill at Craft'd Grounds.
The authentic European bakery and deli is co-owned by four foodies including a French baker Steven Chevalier, an Italian chef Marco Conti, fellow Italian Salvatore Compagnone (Director of Brand), and Brisbane-born baker Samantha Taverner, also known as the Donut Queen.
Everything is made onsite by Doughcraft and its sibling wholesale company Farine & Co, including an array of artisan loaves, and delicious sweet and savoury donuts.
Open from 6am, Wednesday to Sunday, customers can stop by first thing in the morning for a freshly baked loaf of bread such as Italian panini, French baguette, traditional sourdough, and specialty loaves like Kamut bread; made with Kamut flour (ancient grains), turmeric, almonds and pepita seeds, this wholesome bread is low in gluten, high in protein.
As well as artisan bread, the bakery has a tantalising selection of sweet - think caramel, chocolate and lemon meringue - and savoury 'bombolone salata' doughnuts. The latter filled with cream cheese and topped with sea salt and capers. Plus, there are focaccia buns infused with rosemary, olives or nduja (spicy salami spread).
Doughcraft also offers a range of gourmet sandwiches (grab-and-go or enjoy onsite) such as fresh sourdough filled with Le Conquérant camembert, Sardinian-style sausage and local honey; sourdough focaccia filled with homemade pesto, prosciutto cotto, buffalo mozzarella, fresh tomatoes and rocket; and the Normandie sandwich - mustard sourdough layered with Brie de Rambouillet, granny smith apples and honey.
In addition, there's fresh pasta dishes like Marco's mouth-watering, traditional Sardinian lasagne with Italian ham and creamy béchamel sauce, that customers can purchase to take home and reheat.
But that's not all, there 's an array of locally and internationally sourced, quality cheeses and cured meats available to purchase including Le Conquérant camembert, Mauri gorgonzola, Sopressa salami and more.
Why not order a charcuterie board, with your choice of cheese and meats, to enjoy with a beer or two at Brewtide. Or grab a coffee at next door neighbour Collingwood Black Espresso to pair with your pastry.
