The Beaumont is a gorgeous Australian-themed rooftop bar and beer garden tucked away atop an historic Fortitude Valley building.

With decor that takes inspiration from The Great Dividing Range (the colours, fauna, flora and history) and a menu of pub classics celebrating Aussie flavours, The Beaumont is an oasis of Australiana on the edge of the Valley.

Offering a variety of ambient spaces for patrons to gather, the al fresco area features a host of bar tables and stools and a centrepiece tree in a cedar planter box with circular banquette, whilst to one side there's a line-up of undercover booths and on another a fenced-in rooftop lap pool.

On the Ann St side, The Beaumont extends into the hollowed out shell of the historic building with more ambient dining and drinking areas in the high-ceilinged dimlit space featuring casement windows, hanging plants and exposed handmade brick walls.

A stunning backlit bar stretches undercover along another wall and is a vision of pink with lit up bottles interspersed with plants.

Must-try are the signature cocktails with unique Aussie flavours, such as the Outback Blaze Marg (Olmeca Altos Plata Tequila, Cointreau, bush tomato & chilli infused agave, lime, chilli salt rim); the Milo Flip (Takamaka Spiced Rum, Licor 43, Milo, condensed milk & fresh egg); and Aussie Sunrise (Wyborowa Vodka, Marionette Amaretto, finger lime, lime, kakadu plum, lemonade).

A small selection of cool refreshing Spritz includes Limoncello or Mango Inferno Spritz and there's also a list of classic cocktails such as Caprioska, Manhattan, Espresso Martini, Mojito, Old Fashioned and Whiskey Sour.

The rest of the drinks menu features an extensive selection of spirits including an impressive variety of boutique along with standard, as well as a long list of apperitif and liqueurs. Meanwhile the conclise wine list features mostly Australian wines, while the majority of beers on tap are local craft beers.

The food menu features classic dishes given a unique twist, starting with small bites like skin-on vegemite fries; crocodile and lemon myrtle spring rolls (highly recommended); Byron Bay burrata with chargrilled mango and witlof salad; Speck & Byron Bay mozzarella croquettes; Lobster brioche roll; and char-grilled Mooloolaba prawns with garlic butter.

A range of burgers includes The Big Smoke (wagyu, lettuce, tomato, onion, cheese, pickles, Monty burger sauce & potato bun); Green Mamba (broad bean, pea & spinach patty, chickpea crema, lettuce, onion, tomato, beetroot relish & potato bun); and Bushranger Roll (grilled kangaroo sirloin, leafy greens, onion, bush chutney & bread roll).

House specialty are the Neopolitan Pizzas, house made with 130yr old master sourdough culture recipe, and with toppings such as Spicy Surfer (sugo, prawn, fresh chilli & chargrilled pineapple); Sunburnt Peach (grilled peach & prosciutto); The Outback (native anise & lemon myrtle kangaroo); Valley Forager (enoki, shimeji & field mushrooms, truffle oil, rosemary, bocconcini) and Chook & Stone (Queensland mango chicken).

For Mains, the choices include Chef's Pie of the Week; Humpty Doo beer battered barra; Free range chicken schnitzel; Rump steak or Quinoa rissoles (heirloom cherry tomatoes, chargrilled pumpkin balsamic reduction & crispy chickpeas); and there's also beetroot or Caesar salad.

Otherwise there's Carrara MB7 rib fillet with confit potato and Granite Belt red wine jus and, for something truly hearty and sustantial, there are feasting plates for 2 or 4, including overnight braised lamb shoulder or whole roasted spiced cauliflower, each with a choice of 3 sides.

The Beaumont also serves a light breakfast from 8-10.30am, including smashed avo; breakfast wrap; granola cup; croissant; bacon & eggs; breakfast burger or Socca crepe (black salt, heirloom tomatoes & bush chutney).

Good to know - Whether grabbing a quick bite for breakfast, lounging with a cockaill in hand, settling into a booth and sharing tapas or dinner with friends, taking a dip in the pool or kicking back into the night as the DJ spins cool tunes under the stars, The Beaumont is a destination for any time of day or occasion.

Need to know - The entrance is around the corner in Gipps St. Take the stairs to the backpackers, turn right and then take the staircase up to The Beaumont.
