Tellus Bar Dining is a chic contemporary Latin-American inspired restaurant and bar nestled on the corner next door to Coles at The Barracks, Petrie Terrace.

Customers can take a seat inside in the high-ceilinged ambient dining space or al fresco on the terrrace where there are a smattering of tables shaded by umbrellas.

Tellus takes its inspiration from the elemental trio of grape, grain, and dough, each playing a defining role in the menu and experience and is helmed by a new wave of culinary talent blending Dutch roots with a passion for Latin inspired cuisine.

The delectable menu is a fusion of flavours, starting with the snacks (yellowfin tuna taco, Tom Yum spiced peanuts or salted Lebanese cucumber with peanut butter & chilli oil) which are also perfect to enjoy with a glass of wine or one of the house cocktails.

Entrees include king prawns with lemon grass butter, fresh herbs & shallot vinaigrette; smoked honey beef ribs with Balinese sambal; Lebanese pickled cucumber & sticky fig jam; kingfish crudo; and golden spice squid (crispy squid, rash el hanout, lime & roasted garlic hollandaise).

Mains are equally tempting, with dishes such as Beggar's Spring Chicken (pastry-baked young chicken, five-spice soy jus); Braised Crispy Pork Hock (fried slow-braised pork hock, black vinegar dressing & herbs); and Wagyu Striploin 250g (smoked, daikon, ponzu jus).

To accompany there's a choice of crunchy killer fries (Moroccan spice & parmigiano); confit fennel (slow-cooked fennel with saffron and spices, harissa, and toasted almond); or burnt sugar loaf (miso butter, furikake & dashi vinaigrette).

Save room for dessert, which includes an epic Tiramisu Tray. as well as salted coconut sorbet with stropwafle crumb; and Basque cheese cake brûlée with marscapone ice-cream.

As for drinks, Tellus showcases a vibrant array of sparkling, white, rosé, and red wines, alongside premium spirits, aperitifs, and digestifs from around the globe.

Their signature cocktails are also worth a try - think Pink Peppercorn Spicy Margarita, Popcorn Fizz (roku gin, lime, popcorn concentrate & ginger ale); Smoky Whisky Sour (buffalo trace bourbon, sugar & lemon, egg white & cherry woods smoke); and Midnight Blossom (milk washed black tea infused roku gin, lemon & agave).
