Imbibis Craft Distillery


Imbibis, an artisan distillery in Haigslea on the outskirts of Ipswich, crafts heavenly gin and brandy in small bespoke batches.

The work of award-winning winemaker Jason Hannay, what makes Imbibis unique is that the spirits themselves are produced using grapes and wine, with flavours inspired by the South East Queensland landscape.

Gins (Passion or Clarity) include premium botanicals such as juniper, coriander seed, angelica root, liquorice root, orris root, orange peel, lemon peel and wild foraged lemon myrtle, bottlebrush, native wisteria and bush gardenia and are hand crafted in a bespoke, luxurious copper pot still that was designed specifically by their Chief Distiller. 

Meanwhile the Single Barrel Shiraz Brandy is infused with the tastes of toffee, sultana, pepper, spice, and grilled nuts and carefully distilled in luxurious copper and then aged for two and a half years in locally hand made small format oak barrels for their distiller.
