SAILOR AND WALRUS HAS BEEN REPLACED BY BLUEBOTTLE BAR.
Sailor and Walrus Wine and Tapas Bar is Manly’s slick new maritime-themed bar - a welcoming cool retreat for weary seafarers and locals alike.
Occupying one of the original character shops on Cambridge Parade in Manly’s village heart, Sailor and Walrus features polished wooden floors, a bar with inlaid world map running along one side and a dining section with chic navy and woven cane chairs and couch set in the bay window.
The bar makes a great place to hang out on one of the timber stools, exchanging banter with the friendly owners Vanessa and Mike and partake in some of the best Spanish tapas to be found anywhere in south east Queensland.
The tapas, which are served all day, come served as Small Plates or Custom Plates and are divided into single Tapas of Cheeses, Cured Meats, Salada, Conservas, Caviar and Sweets.
From the small plates customers can chose from Yasa Siberian Caviar, Mt Zero olives, Banderillas (white anchovies, pickled garlic and guindilla peppers, Pane with Pepe saya cultured butter, cured meats such as Jamon de Serrano and the prized Paleta Iberico De Ballota (the finest jamon in the world). Otherwise there’s Haloumi with cracked pepper and lemon and Wagyu Bresaola cured with juniper berries and bay leaves, with olive oil, bay leaves, rocket and parmesan.
Spanish Conservas including White Anchovies, Mussels in Galician sauce, Baby Sardines and Chiperones (baby squid stuffed with its own ink) come served with lemon and crusty bread and Cheese options include a selection of artisanal Australian and international cheeses served with crackers, baby pickled figs and white pickled garlic.
Highly recommended is a Custom Plate, which serves 2-4 and features a selection of the above, served with pane, crackers and Oaty Joe biscuits (made from a retro recipe in Toowoomba). Salads at Sailor and Walrus (in sizes small or large) include Caprese (fresh buffalo, mozzarella, roma tomatoes, basil, aged balsamic vinegar and salt sea flakes and the Sailor Salad (prosciutto di parma, gorgonzola, baby pickled fig and balsamic vinegar.
Desserts here are something else too – try the locally made Couveture Rocky Road topped with Pash Mak (Iranian fairy floss) garnish and edible flowers.
Sailor and Walrus has an excellent range of wines to accompany, otherwise there’s a selection of international beers including Becks, Corona, Heineken, Peroni and Budweiser, as well as Tap Cider over ice and house spirits and Tap Sailor and Walrus lager.
A small list of cocktails include Petite Mojito, High Ball Margarita, Tequila Sunrise and Mint Julep, or try the refreshing house creation Minty C- a combination of fresh mint and cider.
